After reading many books, recipes & blogs that talk about healthy & nourishing fats I decided it was high time I render some lard. Plus who doesn’t want the best pie crust in the world? 🙂
I looked around at a few different rendering techniques and I choose to go with a stove top version for my first time. Pretty much because I wanted to watch the process; verses leaving it in the oven to do its thing. The main recipe that I followed was from Jenny at Nourished Kitchen and you can find her post about lard here.
In Bozeman, MT we’re fortunate enough to have an organic farm in the valley that started raising pigs a couple of years ago. I contacted Amaltheia Dairy on Facebook to see if I could buy some of their pork fat. They sell the fat frozen in 5# bags so I grabbed one and set to work!
I now have a few pints of lard hanging out in my freezer. So far I’ve used it to cook veggies & hamburgers and it works great! Not to mention it keeps my cast iron skillet well seasoned 🙂
