Since learning about healthy eating and getting into Traditional Cooking I’ve had to reevaluate how I make breakfast. I started out eating organic cereals, then I made my own granola/hot cereals and now I’ve ventured into more nourishing breakfasts like: soaked grains, egg bakes and “puddings”. There are a lot of great baked oatmeal recipes out there and I started off using the one by Jenny at Nourished Kitchen which can be found here. I don’t like to spend too much time on breakfast so I just dump everything into a bowl, mix well and bake!

Soaked Steel Cut Oats & Nuts

Here’s the simplified recipe that I use and doctor up to my liking….. i.e., I just use what I have in the pantry
This bake lasts my husband and I six days! We just reheat a square in the toaster oven.
{Recipe} Baked Steel Cut Oats
(adapted from Jenny’s recipe linked to above)
Soak 1 lb steel cut oats, 1 cup nut(s) of choice & 2 Tbsp whey in lots of filtered water for about 12 hours. Drain & rinse oat mixture. Place in large bowl and add 6 eggs, 2 cups milk, 1 cup dried fruit(s) of choice, 3 Tbsp coconut oil, 1 Tbsp cinnamon & 1 tsp vanilla. Mix really well, until all the egg whites are incorporated. Pour into a 9×13 pan that’s been heavily greased with coconut oil. Bake in a 375* oven for 45 minutes. Serve with milk, yogurt, jam &/or maple syrup.

Heather, this one is a solid bar. I’ll be posting my pumpkin breakfast pudding recipe soon. I get the organic steel cut oats at our Co-op, I bring a large container and fill it up! It’s a lot better price then the little bags that you usually see

Is the whey necessary? It isn’t that beneficial if you don’t burn it off. I’m not looking to gain weight and I know that whey protein can really add on the pounds fast if you don’t exercise enough.
Aaron, you can use yogurt or apple cider vinegar if you’d like for the soaking part. It gets drained and rinsed off so I don’t think the whey would add up to anything
